2 chicken eggs
25 g cornstarch

How to make the cake base:
Step 1: Separate the egg whites and yolks in 2 separate bowls (clean bowls, no water or fat, egg whites do not mix with yolks)
Step 2: In the bowl of egg yolks, add 25 g cornstarch, 25 g flour, 30 g fresh milk, 25 g cooking oil. Mix well and add vanilla (the mixture is not thick, not thin and flows continuously)
Step 3: In the bowl of egg whites, add salt, lemon juice, beat until foamy like soap. Next, slowly add 40g of sugar until finished, increase the speed to the highest level and beat until the peaks appear, the peaks are slightly bent down (if upside down, do not fall)
Step 4: Turn on the air fryer at 200 degrees Celsius for 5 minutes to bake the sponge cake with the air fryer
Step 5: Divide the egg whites into 3 parts. Add each part to the bowl of egg yolks and perform the “fold” technique (fold) the dough evenly. If you are not confident, use a whisk to fold it firmly! Do it firmly, mixing too much will break all the air bubbles, the cake will easily collapse
Step 6: Pour the dough into the mold. Tap the mold lightly to break the large air bubbles for a smooth cake texture. Put the cake in the pot, bake the sponge cake with the air fryer at 160 degrees Celsius, time 30 minutes (depending on the pot). Test the cake with a toothpick, insert it into the middle of the cake and pull it out immediately, if the toothpick is dry, the cake is done. Take out the cake mold and gently drop it onto the table 2-3 times from a height of 20-30 cm. Turn the cake upside down on a cooling rack, then use a knife to peel the cake and take it out.
Note: For an air fryer, when you put the cake in the mold and bake it, the cake surface will be very close to the heating element. So if you increase the ingredients, the cake will expand higher, leading to the phenomenon of the cake surface cracking (which looks very ugly). So consider increasing the ingredients!
